Ingredients

- 3 large eggs (at room temperature)

- 3/4 cup (160g) caster sugar

- 2/3 cup (150g) salted butter (melted)

- 1 1/3 cup (160g) all-purpose flour (sifted)

- 3/4 teaspoon baking powder

- 1 orange (juice and zest)

-1 pinch of nutmeg

- 1/2 cup of additional orange juice (for after the cake is done)


Instructions

1. Preheat the oven to 350°F (180°C).

2. Grease a loaf pan.

3. In a large mixing bowl, mix sugar and eggs until fluffy and pale.

4. Sift in the flour and baking powder, stirring them together.

5. Add a pinch of nutmeg, melted butter, orange juice from the orange, and the orange zest into the mixture.

6. Pour the batter into the loaf pan, and bake for 40 minutes or until a toothpick or tester tool comes out clean.

7. Remove the cake from the oven and poke it all over with a fork. Slowly add 1/2 cup of orange juice.
